Whoever has been to Sardinia, whether the North or South, knows that this wonderful land offers, in addition to a territory full of natural beauty that remains imprinted on your memory, dishes and such varied specialties with new tastes, that they encourage you to stuff yourself ! At? times, crude tastes like the land that produces them, others delicate, like the sunsets that are enjoyed at "Ingortosu", a beach of a tormenting wildness; but most times full of a wild and bursting taste that entraps the essence of this splendid land.
Take the ?musciame?of tuna (tuna sirloin) as an example, it is obtained from the meat of the upper part ( known in local jargon as Bodano) of tuna fished in the "mattanza" off the Islands of S.Antioco and San Pietro, and is a typical product of this coastal area. It is prepared directly on site, salted and dried in the air for approximately one week. A product of quality, obtained from tuna which in that period seem to have better and ?more delicate meat than in others. What?s more, they even come from Japan in order to choose the best ones and take them away fast and furiously!
Do we want to speak about cheese? Not about the one given to you in the restaurants for tourists... I?m speaking about the one made traditionally in Osilo, Gavoi, or in the heart of Barbagia Desulese. Cheese, that depending on the season, isn?t available for anyone, because there is little or because it has been an uncertain season and they won?t give you any, so that they don?t make " una figura meschina", a bad impression.
We won?t always manage to satisfy your requirements, but we will try our best, because the products here are really good and deserve to be known in the best way... by tasting them!!
